For our sponsors, we are offering the opportunity to have side events as a means to leverage air-hockey to promote themselves. We may have accuracy contests, games like press your luck, triples roasting (this is a hoot), etc. With Zwack and Red Stripe Light we are discussing a game that may involve their product and thus be for players 21 and up. If we have enough interest, we may even organize a women's event.
So in general it is a day reserved for fun sponsor-related activities. And of course if all of a sudden we get 200 new players, that day could be repurposed as a "qualifier" event.

how will the doubles work this year? are we picking our own teams or will it be a random mix of averaged out skill levels like last year (which i thought was a cool idea btw) ?

There are 2 doubles tournaments. One is for amateurs and novices only (level 2 and below) and the other for anybody. It is a pick your own partner in both events, although anybody without a partner can request to be paired.
Thanks,
Brian

Are we using a bye chart, and if so what time does top 16 seeds start?
